- 2.5 oz clarified banana-infused Broken Shed Vodka (recipe follows)
- 0.75 oz simple syrup
Clarified Banana Infused Vodka
- 250 g thinly sliced bananas
- 375 ml Broken Shed Vodka
- 60 ml fresh lemon juice
- 237 ml cold whole milk
Place bananas in a glass container, cover with Broken Shed Vodka, and let sit at room temperature for 2 days. Over a large bowl, pour the infusion through a fine mesh strainer, avoiding the temptation to press down on the bananas. Stir the fresh lemon juice into the infusion.
Pour the cold milk into a glass container and then follow with the infusion (and not the other way around). Don’t panic, but the milk will curdle — this is normal. Leave undisturbed for 1 hour. Prepare a large coffee dripper (with paper filter) over a glass container. Pour the mixture through the filter, leave in the fridge overnight, and pass through a clean filter again in the morning. Transfer the crystal-clear banana vodka to a sealed bottle and store in the refrigerator for up to 2 months.
