All the Whey

An intriguing seasonal switch up, this drink is best made during the cooler American months—and the warmer New Zealand weeks. That's because you'll need fresh blood oranges, so mark your calendars accordingly. We promise the reward is worth the effort for this playfully sweet and sour cocktail.

Ingredients

  • 2 oz Broken Shed Vodka
  • 1 oz fresh blood orange juice
  • 0.75 oz blood orange oleo-saccharum (recipe follows)
  • 0.25 oz fresh lemon juice
  • 0.5 oz pomegranate-honey reduction (recipe follows)
  • Garnish: pomegranate arils and blood orange twist

Blood Orange Oleo-Saccharum

  • 4 blood oranges
  • 1 lemon
  • 8 oz sugar

Peel the citrus into large strips, avoiding any white pith. Place into a freezer bag and toss with the sugar until the peels are coated evenly. Let sit at room temperature for at least 4 hours (and up to 24 hours). Strain the oil into an airtight jar, and store in the refrigerator for up to one week.

Pomegranate Honey Reduction

  • 4 oz pomegranate juice
  • 2 oz clover honey

In a small saucepan over medium heat, combine pomegranate juice with clover honey and reduce by half for 10 to 12 minutes. Allow to cool, then transfer to an airtight jar. Store in the refrigerator for up to two weeks.

Directions

Short shake Broken Shed Vodka, blood orange juice, oleo-saccharum, and lemon juice with 3 ice cubes, then double strain into a Collins glass filled with ice. Drizzle pomegranate-honey reduction over the top, then garnish with pomegranate arils and a blood orange twist.
